ORTHOGNEISS is a cuvée crafted from vines planted on an Orthogneiss soil, which inspired its name. This wine benefits from a little cellaring to allow its tertiary aromas to unfold with gentle grace.
SOIL: Orthogneiss soil, a granite rock metamorphosed through the action of plate tectonics.
HARVEST: manual / hand-picked.
YIELD: 35 hl/ha.
VINIFICATION: delicate pneumatic pressing. No settling of the must. Fermentation in underground tanks using indigenous yeasts.
AGEING: 15 to 18 months on fine lees in underground cellar tanks. The official label mention "sur lies" does not appear on the bottle, as displaying it mandates a bottling window strictly between March 1st and November 30th of the year following harvest—a constraint the estate chooses not to follow.
BOTTLING: unfined, with light filtration through diatomaceous earth.
CORK: natural cork.
