Terroir

EXPOSURE: South-East.

SOIL: Orthogneiss soil—a hard metamorphic granite rock formed under increased temperature and pressure driven by Pre-Cambrian plate tectonics.

Viticulture & Vinification

HARVEST: manual / hand-picked.

YIELD: 20 hl/ha.

SORTING: in the vineyard and at the winery.

VINIFICATION: the estate has been certified in Organic Agriculture since 1975 and in Biodynamics since 1998. The vines receive no chemical treatments, nor have they ever received any.

The Folle Blanche and Chardonnay grapes are manually destemmed and vinified separately, yet both in terracotta amphorae:

  • The Folle Blanche grapes are placed in terracotta jars for skin maceration lasting approximately 20 days. Alcoholic fermentation occurs spontaneously driven by indigenous yeasts. The grapes are then pressed, and the harvested juice is returned to terracotta jars for 9 months of ageing during which malolactic fermentation completes.
  • The Chardonnay grapes are placed in terracotta jars for 9 months of skin maceration. Alcoholic fermentation triggers spontaneously through indigenous yeasts, followed by malolactic fermentation initiated by lactic acid bacteria.
    After the 9-month skin-contact maceration, the must is pressed.

AGEING: blending of both grape varieties in vats for 2 months.

BOTTLING: unfined and unfiltered.

CORK: natural cork.

INFORMATION: CÉLESTE is an orange wine vinified without any added sulfites. It must not be exposed to heat and should be stored in a cool cellar.
