CARPE DIEM draws direct inspiration from Epicurus’ philosophy: a celebration of the present moment and the raw work of the earth.
The terracotta clay—a neutral vessel par excellence—preserves varietal brilliance and the natural vitality of the grape. Crafted with utter respect for the fruit, this cuvée is vinified without the slightest addition of sulfur dioxide.
SOIL: the grapes stem from vines rooted in an acidic and siliceous granite bedrock, formed millions of years ago by the slow cooling of plutonic magma.
This exceptional terroir imparts a deep mineral backbone and a structure built to age gracefully over time.
HARVEST: manual / hand-picked.
VINIFICATION: delicate pneumatic pressing. Natural vinification with no added sulfites. Fermentation triggered solely by indigenous yeasts in vats.
AGEING: 18 months of maturation in terracotta jars, followed by 12 months of bottle ageing.
BOTTLING: unfined and unfiltered.
CORK: natural cork under a wax capsule.
